Chicken breast with olives and cream cheese

Olives make everything better.

Serves 4 (needs something to go with it: e.g. a salad).

It's not difficult. Yes, there's a pre-cooking step, but it doesn't take a long time at all.

Ingredients

500g chicken breast filet (thinly sliced)
250g mascarpone
150g black olives (pits removed, roughly chopped)
8-10 pcs dried tomatoes (chopped)
100g mozzarella (sliced)
10 leaves basil (chopped)
1 tsp ground black pepper
salt
olive oil

Method

Preheat oven to 180°C.
Lightly salt the sliced chicken breast.
Heat a little olive oil in a pan, fry chicken slices for about 1 min per side.
Lay chicken slices in a baking sheet or pan.
Mix mascarpone with basil, dried tomatoes, olives, pepper, and a tsp of salt. Cover meat with mixture.
Distribute sliced mozzarella over top.
Bake for 30 min.
