Olives make everything better.
Serves 4 (needs something to go with it: e.g. a salad).
It's not difficult. Yes, there's a pre-cooking step, but it doesn't take a long time at all.
Ingredients
- 500g chicken breast filet (thinly sliced)
- 250g mascarpone
- 150g black olives (pits removed, roughly chopped)
- 8-10 pcs dried tomatoes (chopped)
- 100g mozzarella (sliced)
- 10 leaves basil (chopped)
- 1 tsp ground black pepper
- salt
- olive oil
Method
- Preheat oven to 180°C.
- Lightly salt the sliced chicken breast.
- Heat a little olive oil in a pan, fry chicken slices for about 1 min per side.
- Lay chicken slices in a baking sheet or pan.
- Mix mascarpone with basil, dried tomatoes, olives, pepper, and a tsp of salt. Cover meat with mixture.
- Distribute sliced mozzarella over top.
- Bake for 30 min.
