Chicken breast with olives and cream cheese

Olives make everything better.

Serves 4 (needs something to go with it: e.g. a salad).

It's not difficult. Yes, there's a pre-cooking step, but it doesn't take a long time at all.

Ingredients

  • 500g chicken breast filet (thinly sliced)
  • 250g mascarpone
  • 150g black olives (pits removed, roughly chopped)
  • 8-10 pcs dried tomatoes (chopped)
  • 100g mozzarella (sliced)
  • 10 leaves basil (chopped)
  • 1 tsp ground black pepper
  • salt
  • olive oil

Method

  • Preheat oven to 180°C.
  • Lightly salt the sliced chicken breast.
  • Heat a little olive oil in a pan, fry chicken slices for about 1 min per side.
  • Lay chicken slices in a baking sheet or pan.
  • Mix mascarpone with basil, dried tomatoes, olives, pepper, and a tsp of salt. Cover meat with mixture.
  • Distribute sliced mozzarella over top.
  • Bake for 30 min.
