Spinach and feta pasta

The basics.

Serves 4.

Ingredients

  • 400g pasta (penne)
  • 200g baby spinach (washed)
  • 200g feta cheese (crumbled)
  • 200ml cream
  • 4 stalks of scallion (finely chopped)
  • 4 cloves of garlic (finely chopped)
  • salt, pepper
  • olive oil
  • grated grana padano or parmesan cheese (garnish)

Method

  • Cook pasta (add a bit of salt and olive oil to the water).
  • Heat olive oil in a pan. Sauté scallions and half of the garlic for a few minutes.
  • Add spinach, salt and pepper, and stir until spinach leaves collapse.
  • Add cream and reduce heat; cook until pasta is done.
  • Remove pan from heat. Add feta, the rest of the garlic, and finally the pasta. Toss until well combined.
  • Serve with the grated cheese.

Notes

Add more garlic. As much as you want. A whole lot.
