The basics.
Serves 4.
Ingredients
- 400g pasta (penne)
- 200g baby spinach (washed)
- 200g feta cheese (crumbled)
- 200ml cream
- 4 stalks of scallion (finely chopped)
- 4 cloves of garlic (finely chopped)
- salt, pepper
- olive oil
- grated grana padano or parmesan cheese (garnish)
Method
- Cook pasta (add a bit of salt and olive oil to the water).
- Heat olive oil in a pan. Sauté scallions and half of the garlic for a few minutes.
- Add spinach, salt and pepper, and stir until spinach leaves collapse.
- Add cream and reduce heat; cook until pasta is done.
- Remove pan from heat. Add feta, the rest of the garlic, and finally the pasta. Toss until well combined.
- Serve with the grated cheese.
Notes
Add more garlic. As much as you want. A whole lot.
